This is my first entry into the Fresh from the Oven challenge which encourages bakers to test their boundaries and venture into new recipes one loaf at a time. This month the challenge was set by Sally of My Custard Pie who wanted to assist vegetable growers with the over abundance of vegetables in their season by using them in bread. She made some gorgeous looking courgette cluster rolls and whilst I was tempted to give them a go I was suffering with an abundance of carrots in my vegetable rack. Normally these would be transformed into my infamous carrot cake but I thought I’d try a bread with carrot.
After a quick google I found this recipe on the ever faithful BBC GoodFood site.
Carrot & Walnut Bread
350g plain flour
150g wholemeal flour,
1tsp salt,
2 tsp bicarbonate of soda,
150g carrots, peeled and grated,
handful of walnuts, toasted and chopped
300ml low fat Greek yoghurt
125ml semi-skimmed milk
Pre-heat the oven to 230C. Mix the flours, salt and bicarbonate of soda, then stir in the carrot, walnuts, yoghurt and enough of the milk to make it a soft, quite sticky, dough.
Tip onto a floured surface and form a flat ball, put on a baking sheet, slash the top and bake for 30 minutes until risen and cooked. Listen for the hollow sound as you tap it.
This was a really enjoyable. Perfect with some strong cheese or even just slathered in some butter.

Welcome to the group! I am sure you will love it. I think your bread sounds delicious. I do love carrots and they are the vegetable I have on hand most often. Bravo on your loaf!
That looks great. I was hoping you were going to show what a slice of it looked like. Now, I am completely convinced to try it. I have some carrots to use up to. I can see this and a pot of soup featuring tonight. I will have to substitute the walnuts though, my husband hates walnuts.
I did like the addition of the walnuts, but think it would be just as fab without them. Let me know how you get on with it. Think it’ll be a firm favourite in this household. How can I feel guilty eating bread when it contains vegetables!

Delicious! I am new to FFTO too and was wondering about carrot, as courgettes aren’t in season here for another five months or so. Must bookmark this!

Now that looks wonderful. I really like the look of the walnuts in there – I can imagine they give a wonderful bit of texture and bite and also balance the sweetness of the carrots a little. Your bread looks so tasty. What a great start to the FFTO challenges.

Welcome FFTO, I hope you enjoy the group. I think my baking has improved tenfold since I joined last December. Your loaf looks slightly more savoury than the other carrot loafs. The crust looks as if it has a good bite to it, did you mist the oven?

It was very savoury – lovely with cheese or just butter. It would be perfect with a soup too. I didn’t mist the oven but it was a good crust – just lucky I guess!
